What the glycaemic index actually is
The glycaemic index, or GI, ranks how quickly a carbohydrate-containing food raises blood glucose after it is eaten, compared with a reference food. Technically it is calculated from the incremental area under the blood-glucose response curve after a person eats a portion containing 50 grams of digestible carbohydrate, measured against that same person's response to the reference food. Foods are then placed on a 0โ100 scale.
By the widely used classification, a GI of 55 or below is low, 56 to 69 is medium, and 70 or above is high. Plain white rice varieties often fall in the higher band, which is why rice gets singled out in conversations about blood sugar.
The key thing to hold onto is that GI measures the speed and shape of the glucose response โ not how nutritious a food is, how many calories it carries, or whether it is "good" or "bad". A food can be low GI and still energy-dense; a high-GI food can be perfectly reasonable in a balanced meal.
Why aged basmati tends to sit lower

Ageing reduces the grain's moisture and allows the starch to firm up, affecting how it cooks and how readily it is digested. The long, separate, non-sticky grains that good aged basmati produces are a visible sign of that firmer starch structure.
This is why aged basmati varieties are often reported with GI values in the low-to-medium range. The important caveat is that GI is not a fixed property you can assume โ it varies by variety and by growing and ageing conditions, and it has to be measured on the specific product through proper testing rather than estimated. Representative published figures are useful for orientation, but the number that belongs on a pack is one that has been tested on that rice.
What a lower GI does โ and does not โ change
If a rice has a lower glycaemic index, the practical meaning is modest and specific: the glucose from that portion tends to arrive in the bloodstream more gradually rather than as a sharp early spike. That is the whole of the claim. It is not a promise about managing any medical condition, it is not a weight-loss mechanism, and it does not mean you can ignore portion size.
In fact, portion and pairing usually matter more than GI alone. Eating rice alongside protein, vegetables and some healthy fat โ dal, sabzi, curd, a little ghee โ slows digestion of the whole meal, because fibre, fat and protein all blunt the speed at which carbohydrate is absorbed. Serving a sensible quantity keeps the total carbohydrate load in check. And letting cooked rice cool slightly, as happens with leftovers or a rice salad, forms some resistant starch, a portion of which behaves more like fibre than sugar.
